How Many Scoops of Coffee for 10 Cups (Measure Your Scoop First)

A 10-cup drip pot that holds 50 fluid ounces takes about 81 grams of ground coffee. That is 16 level tablespoons, or 8 level two-tablespoon scoops, or 4 of the four-tablespoon scoops Mr. Coffee ships with its Easy Measure machines. Fifty ounces is what Mr. Coffee, BUNN and Cuisinart mean by ten cups, since their "cup" is 5 fl oz; the 81 grams comes from the Specialty Coffee Association's ratio of 55 grams of coffee per kilogram of water, the figure SCA Standard 310-2021 uses to test home brewers. If your 10-cup line holds 40 ounces, as on a Technivorm Moccamaster, the same ratio gives 65 grams, or 13 level tablespoons.

A coffee scoop has no defined volume

The convention says two tablespoons: one fluid ounce, about 30 millilitres, an eighth of a US cup. Nothing enforces it. Braun's support page for the MultiServe brewer describes a dual-sided scoop with a 1½-tablespoon side and a 2-tablespoon side. The manual for Mr. Coffee's Easy Measure 12-cup machine, part 197663, notes beside its dosing chart: "The color coded measuring scoop is four tablespoons total."

So "ten scoops" describes four different pots. At the 5 grams per level tablespoon Mr. Coffee prints in its manuals, ten scoops into a 50-ounce brew gives:

A fourfold spread, from one instruction. Only the 1½-tablespoon scoop lands inside the Golden Cup band of 49.5 to 60.5 g/L, and it is the least common of the four. The tablespoon itself is the settled part: 15 mL under the FDA's labelling rule, 21 CFR 101.9, and 14.79 mL in US customary usage. That 1.4 percent is nothing beside a scoop that may hold four times your neighbour's.

Level-fill your scoop into a 1-tablespoon measuring spoon and count. It is the one measurement you cannot skip.

Your 10-cup line is not ten cups of anything

Mr. Coffee states it in the getting-started page of its manuals: "1 Mr. Coffee 'cup' is equivalent to 5 fluid ounces." BUNN publishes the same arithmetic for the Speed Brew line, 4 to 10 cups being 20 to 50 ounces. Technivorm rates the Moccamaster KBGV at "1.25 L / 40 oz / 10 cups," or 4 ounces a cup. Coffee bags assume a 6-ounce cup, your measuring cup is 8, and the cup on a nutrition panel is 240 mL.

Three of those rows are drip machines sold as ten-cup, and the dose across them spans 65 to 98 grams. One manufacturer wobbles inside its own spec: Technivorm's 40 oz and 1.25 L differ by 67 millilitres, worth 3.7 grams at gold-cup ratio. The mug row surprises people most. Fill a 12-ounce travel mug from a 10-cup pot and you get four of them.

Measure the water your carafe actually holds

Set the empty carafe on a kitchen scale, tare it, fill with cold water to the 10-cup line, and read the grams. Water sits at 0.998 g/mL at room temperature, so the gram figure is your volume in millilitres to within 0.2 percent. Without a scale, pour that fill into a two-cup liquid measure, twice.

The dose is then arithmetic: litres times 55 for grams of coffee, or fluid ounces times 1.63 if you would rather stay imperial. A carafe reading 1,480 grams wants 81 grams. Fill the reservoir from the carafe afterwards rather than trusting the window on the tank; the graduations come from different tooling, and I have seen them disagree by half a mark.

Why the chart in the box makes weak coffee

Mr. Coffee's Easy Measure manual gives, for 10 cups at 50 oz, "2.5 scoops = 10 tbs." At the 5 grams per level tablespoon that same manual specifies, that is 50 grams of coffee in 1.48 kilograms of water: 34 g/L, a ratio near 1:30. SCA Standard 310-2021 tests home brewers at 55 g/kg. The chart in the box doses at 61 percent of the standard.

The brand is not consistent with itself either. The PC05 five-cup manual asks 6 tablespoons for 5 cups, which is 25 ounces, and that comes to 41 g/L: two charts from one company, twenty percent apart. The National Coffee Association's one to two level tablespoons per 6 ounces spans 28 to 56 g/L at that same 5 grams a spoon, so only its top quarter reaches the SCA band.

Mr. Coffee's strength control reads: "Bonus: For a BOLDER CUP, use heaping scoops." A heap is not a measurement.

Eleven years in a green-coffee lab taught me to distrust instructions of that shape. We brewed one recipe forty times a morning, dosed to the tenth of a gram, because a sample room exists to compare coffees and any variable left loose in the method turns up later disguised as a defect in the bean. Start at 55 g/L. I run nearer 60 on paper-filter drip, since the SCA figure was calibrated for a batch profile and reads thin through a flat-bottom basket.

The carafe stops short of the 10 mark

Mr. Coffee's manual warns of it in one line: "Some water will be absorbed into the coffee grounds and water filter during the brewing process." Published retention figures cluster between 1.5 and 2 grams of water per gram of dry coffee, and a cold-brew patent, US 11,284,740, uses 1.7 litres per kilogram for planning.

At the drip end of that band an 81-gram dose holds back some 160 millilitres, so 50 ounces into the tank returns about 44.5 to the carafe, near the 9 mark. Dose against the water you pour in; the standard is written per kilogram of water. Figure the ratio against the coffee that comes out and you land at 49 g/L, under the floor of the band.

Weak, harsh, or different every morning

Two properties get confused constantly. Strength is how much dissolved coffee sits in the liquid, and the ratio sets it. Extraction is how much of the coffee dissolved, and grind, temperature and contact time set that. SCA 310 asks for both: 1.15 to 1.45 percent strength from an 18 to 22 percent yield.

Thin, watery, tea-like coffee is almost always an under-dose. Add coffee. Drying, ashy, hollow coffee that also tastes weak is under-extraction, and the culprit is usually heat. The National Coffee Association specifies brew water at 93 °C ± 3, Technivorm holds 196 to 205 °F, BUNN keeps its tank at 200 °F, and plenty of cheap machines never get there. Bitter and heavy points the other way, toward too fine a grind.

Morning-to-morning drift comes from the measuring far more often than from the machine. A 2016 study in the Revista Brasileira de Engenharia Agrícola e Ambiental put the bulk density of roasted, ground coffee at 300 to 410 kg/m³ depending on roast and grind, so a level tablespoon can hold 4.4 grams or 6.1. Heaping adds another 25 to 50 percent. Dry cool air adds static: this morning, leaves down and no moisture in it, grounds cling to the chute of the mill I carried home from that lab and to the walls of the scoop, and less reaches the basket than left the grinder.

If 81 grams overflows your brew basket, that is a hardware limit rather than a dosing error. SCA 310 requires a certified basket to hold the gold-cup weight with roughly 50 percent headroom for swelling; Mr. Coffee's chart footnotes "Using fine coffee or decaf may cause overflow."

The pot already tastes wrong after ten scoops

Work in this order, one change per pot, and drink the pot before judging it.

  1. Weigh ten scoops of your coffee. Now you have grams instead of a habit.
  2. Measure the carafe fill to the 10-cup line in grams of water.
  3. Divide. If the result sits outside 49.5 to 60.5 g/L, the dose is the problem and nothing else is worth touching yet.
  4. Move the dose in 5 percent steps, about 4 grams on an 81-gram recipe, three-quarters of a tablespoon.
  5. Only once the ratio holds, move the grind, one setting per pot, coarser for harshness and finer for thinness.
  6. Suspect the machine last, and check its brew temperature before blaming anything else.

I once passed a container on a sample roasted too pale to show the phenol sitting in it, and tasted that mistake again in eight hundred bags. Uncontrolled variables get expensive at scale. At home one costs you a pot, which makes a kitchen the cheapest place to learn the habit.

When to put the scoop down, and how to keep a recipe

Measuring ground coffee by volume carries roughly ±20 percent error, tolerable if you buy one coffee, one roast and one grind forever. Switch bags and the scoop starts lying, because the density changed underneath it. Two brewers in one kitchen is the other threshold; two people's idea of "level" never matches. A 0.1-gram scale costs less than a replacement carafe, and most kitchens would fix more with one than with a bigger machine, which nobody who just bought a machine wants to hear.

Two numbers on masking tape stuck to the machine will outlast your memory: water in grams and coffee in grams, 1,480 and 81. Weigh one level scoop of each new bag, once, and write that figure on the bag. When the new coffee reads 9 grams where the old one read 11, the scoop count changes and the recipe does not.
